Chili Quesadillas

Ingredients

  • Avocado Oil Spray, for cooking
  • 4 Large Whole Grain Tortillas
  • 2 Cups Chili
  • 1 Cups Shredded Cheese
  • 2 Tbsp 2% Greek yogurt
  • Optional Guacamole and /or Salsa

Instructions

  1. Heat a skillet over medium heat and spray with avocado oil spray.
  2. Place a tortilla in the skillet, spread half of it with 0.5 cup chili, and top with 0.25 cup cheese.
  3. Fold the tortilla and cook until golden brown on one side, then flip and cook until golden brown on the other side.
  4. Repeat until you have 2 per person.
  5. Serve with Greek yogurt, guacamole and salsa on the side.
